Effect of Packaging Material and Storage Duration on Quality of Grape Raisins Dried by Open Air Sun Drying

Abstract:
The quality parameters were tested at fifteen days intervals (0, 15, 30, 45, 60, 75, and 90 days). Among two packaging materials, aluminium bags was found best for grape raisins storage up to three months as compared with polythene bags. Deterioration occurred as changes moisture content decreases from 14.84 to 13.96 % (db), acidity decreases from 2.41 to 2.32 %, colour (yellowness index) decreases from 72.23 to 69.07, pH value decreases from 4.84 to 4.75, ascorbic acid decreases from 20.17 to 18.83 for the treatment T1P2; during the 3-month storage, total soluble solid increases from 73.23 to 74.04°B reducing sugar increases from 60.73 to 63.49%, total sugar increases from 63.02 to 65.91 % for the treatment T1P2. Grape raisins can be pre-treated with treatment 1 and dried by open air sun drying method can be store for 3 months in the aluminium bags packaging material in good condition.
